Cornish Hen

This recipe comes from nowhere in particular, but combines my favorite spices–rosemary, thyme, and garlic–in an olive oil rub.  It’s super easy and richly flavorful.  For other cornish hen rubs, see “Honey Glazed Lemon Chicken” over at Simply Recipes, or “Cornish Hens w/Sweet Vermouth Glaze” at Epicurious.

Ingredients:

* One 3.5 lb cornish hen

* One 1/4 cup lemon juice

* 1/2 cup olive oil

* 3 tablespoons rosemary

* 3 tablespoons thyme

* 3-4 garlic bulbs, minced or pressed

* salt & pepper, to taste

1.) Wash chicken and add to an oversized ziplock bag.  In bag combine marinade: lemon juice, olive oil, rosemary, thyme, garlic, and salt and pepper.  Seal bag and shake/mix to combine.  Refrigerate marinating chicken for several hours, but preferrably overnight.  Make sure to rotate bird throughout marinade process.

2.) Preheat oven to 450F.  Add chicken to a roasting rack.

3.) Cook chicken breast-side down (it keeps it juicy!) for 10-15 minutes at 450.  Reduce heat to 350F and cook for 40-50 minutes, or until breasts are no longer pink and chicken is done.

4.) Remove from oven and allow to rest for five minutes before serving.  Enjoy! Makes 3-4 servings.  The chicken is so flavorful that it doesn’t require a sauce, but if you’d like to add a dipping sauce see Giada de Laurentiis’s Basil Curry Mayonnaise here.
