It’s official.  I have discovered the simplest, most flavorful pasta and cream sauce recipe that contains all of my favorite ingredients–roasted tomatoes, spinach, and sausage.

I thought I had made, or tried all of the pasta recipes over at Elise Bauer’s blog, Simply Recipes, but somehow this one missed my radar.  I served this dish to Lydia and Jonathan last Monday night and it was a sensation! Not only did both discuss the dish at length the next day, but they also enjoyed the fresh pesto and toasted bread I served with it.  The combination of warm, toasty bread with freshly made pesto and this pasta with cream sauce is a kind of flavorful furor that I can’t quite express as it was just too clearly delicious.

Fettucini with Roasted Tomatoes, Spinach, & Sausage

This recipe comes from one of my favorite food and cooking blogs, Simply Recipes by Elise Bauer.  Elise’s version of the recipe can be found here.

Ingredients:

* 1 package fettucini noodles (typically 3/4 lb Fettucini)

* 3 shallots, chopped (optional, but I suggest them)

* 2-3 large garlic cloves, peeled & pressed

* 2 14.5 oz cans fire roasted tomatoes

* 1 – 2 cups packed spinach, fresh

* 1/2 – 1 lb spicy sausage

* 1/2 cup grated parmesan (the real kind, not dehydrated)

* 1 tablespoon dried sage

* 1 cup whipping cream

* 2 tablespoons olive oil

* salt and pepper, and thyme to taste (I prefer Tony Chachere’s Cajun Seasoning & fresh cracked pepper)

1.) Begin by bringing a large pot of water to a boil.  Add enough salt so that the water “tastes like sea water” (so say the Italians, so say I).  When water has come to a roaring boil, add pasta and cook until al dente and drain.

2.) Meanwhile, add olive oil to a non-stick skillet and warm.  Add spinach and sausage (I prefer pre-cut-up) and cook until no longer pink.  Add cream and simmer for 5 minutes, season with salt, pepper, and thyme.  Add tomatoes (with juices) and more sage, thyme, salt and pepper as fit.  Allow to simmer for about 10 minutes.

3.) In a large cooking pot, add pasta and cream sauce.  Warm until sauce fully coats pasta and serve immediately.

Enjoy! Makes 8 servings.
