Maple Pecan Granola

Granola.  We eat it with yogurt, we eat it as a quick snack, we eat it as cereal.  Yet, we pay extraordinary amounts for its oaty sugary clusters.  Last time I checked, 1 lb of granola equaled $10 at one of my favorite grocers.  BUT, it consists of oats, brown sugar, maple syrup, nuts, and cinnamon.  Made in large 2 lb quantities, it’s worth $5 with basic ingredients. Why do we keep buying it at the store?

Try this Maple Pecan Granola for an easy, tasty home snack that is better than your store bought granola for a clearly delicious treat.

I came across this recipe at Kevin’s Closet Cooking Blog (the original can be found here[2]).  Although the original asks that you cook the clusters for 1 hour at 300F, I’ve had to revise the directions below: 30-35 minutes at 300F should be plenty.  The first time I made this batch, I burned the crap out of it by cooking it for 15-20 minutes too long.  Trust me, 30 minutes is plenty!

Ingredients:
* 4 cups oats
* 1 cup pecans, or walnuts
* 1 cup Maple Syrup
* 1/2 cup brown sugar, packed
* 3 tablespoons olive oil (maple, honey, orange, or other olive oil would work great here!)
* 1-2 teaspoons cinnamon, to taste

1.) Preheat oven to 300F.  Spray a cooking sheet down and set aside.

2.) Begin by adding ingredients to the bowl: oats, sugar, pecans, maple syrup, cinnamon, and olive oil.

3.) Mix to combine.  You’ll know you’re done mixing when the oat mixture starts to brown in tint all over (the browning means everything is properly coated and integrated).

4.) Spread mixture over greased cooking sheet.  Sprinkle with cinnamon and dust with a teaspoon of brown sugar.

5.) Cook for 30-35 minutes at 300F making sure to stir every 10 minutes.  Serve and enjoy! Makes…a lot.  Probably 20 servings!
