Steak Fajitas

When Christina was in town a few weeks ago, I had the opportunity of sharing her 24th birthday with her! Having already gotten into plenty of trouble and mayhem, we decided to lay low for the evening.  When, suddenly, a familiar conversation presented itself:

“What do you want me to make you for dinner for your birthday? Remember, I can make ANYTHING” I asked her.

“Umm…I don’t know” she said slightly giggling.

“Well…do you want to hear your options?”

“YES!” Christina exclaimed excitedly.

“How about pot pie? Guacamole? Pizza? Pasta?” All of these options didn’t seem to inspire much excitement.  When, suddenly, I stumbled upon the right recipe: “I have steak in the freezer…how about steak fajitas?”

“YES!!!” Said the happy birthday girl.

And so, another clearly delicious recipe from the hand-picked menu of one Christina Janke presents itself.  What I like best about these fajitas is how easy, increadibly, truly easy, they are to make.  Marinated cutlets of steak in a mixture of lime juice and mexican spices create a flavorful beef dish that is truly delicious.  Served in a warm soft tortilla shell with fresh ingredients and sauteed peppers, these steak fajitas are truly birthday worthy.

Steak Fajitas

This recipe comes from my favorite food blogger Elise Bauer over at Simply Recipes.  When I am in want of a staple Mexican dish, I often frequent Elise’s listings as she comes from a Tex-Mex-Happy family and has the BEST recipes.  You can find her original here[1].

Ingredients:

* 1 lb flank steak

* 2 peppers (I prefer yellow and red)

* 1 onion, quartered and peeled apart

Marinade:

* Juice of 1 lime

* 2 Tablespoons of olive oil

* 2 cloves garlic, peeled, minced

* 1/2 teaspoon ground cumin

* 1/2 fresh Jalapeño pepper, seeded, ribs removed, chopped fine

* 1/4 cup chopped fresh cilantro, including stems

Serve with:

* 1 package flour tortillas

* toppings:shredded cheese, sour cream, guacamole, salsa, and shredded iceberg lettuce

1.) Prep ingredients.

2.) Mix together all of the marinade ingredients–cilantro, jalapeno pepper, cumin, juice of 1 lime, garlic and olive oil.  Add steak to mixture (I prefer the steak to be cut into fajita-size slices at this point).  Allow to marinate for 1 hour, but longer is always better.

3.) Warm a non-stick skillet on medium-high and add steak with one tablespoon oil to the pan.  Add onions and peppers.  Saute until peppers and onions have browned.

4.) Add steak and marinade to pan and cook on both sides until steak is “done.”

5.) While steak, onions, and peppers are cooking, soften flour tortillas in microwave 5 seconds each, or on a warmed skillet 10-20 seconds each.  For a good example of warming refrigerated tortillas, see here[2].

6.) Serve steak mixture and tortillas immediately with toppings: shredded cheese, sour cream, guacamole, salsa, and shredded iceberg lettuce.  Enjoy! Makes 4 servings (2 fajitas each).
