Caprese Skewers
My version of this popular cocktail party recipe calls for a combination of colored tomatoes, basil, and fresh mozzarella balls. For another beautiful version of this dish, see this article on “Entertaining…[with] Caprese Skewers[2].“
Ingredients:
*1 lb. red cherry tomatoes
*1/2 lb. yellow cherry tomatoes
*1 bunch basil, washed and stemmed (keep leaves in tact)
*1 (8-ounce) package mozzarella balls
*balsamic vinegar, optional
SPECIAL EQUIPMENT NEEDED:
*knotted bamboo toothpicks[3]
1.) Prep ingredients: wash tomatoes and remove basil leaves from stem. Set aside.
2.) Using party toothpicks (I like the knotted kind), skewer caprese dish in this order: red tomato, mozzarella, basil, yellow tomato, basil, mozzarella, red tomato. Plate and repeat until all ingredients are used up.
Makes 8-10 appetizer servings.
