With the first days of spring (OK, really, first month of spring), I thought it would be an excellent time to share some of my favorite Strawberry recipes with south Louisiana readers.  Here, at Clearly Delicious, we love Ponchatoula strawberries with the kind of passion only five-year-olds can understand.  Topped on shortcake, tossed in granola, or bedded in spinach greens, this fruit is one we’ll always have a use for that’s not just shortcake…but, we have that too.  Here are six of our favorite ways.

1 – Strawberry Scones

One of my favorite early-morning recipes looks far more complicated than it actually is: Strawberry Scones.  Unlike muffins or sweet breads, scones require the same attention you would give to a flaky pie crust (frozen butter, floured surface, and a rolling pin).  But, they’re far easier to work with, and the dough isn’t nearly as delicate or prone to tearing as a pie crust.

For this recipe, I macerate 2 pints of quartered strawberries overnight before adding them to the batter. (I also like to freeze the butter in 1-inch pieces beforehand so it’s ready when I wake up.  In fact, I always keep a box of butter in the freezer, so I can have frozen sticks on hand.)  

Not only does the sugar allow the berries to let go of their natural juices, but this process also makes for an even sweeter, softer scone.  Unlike the dried out pastries I’ve so often had at college cafés, this version is far more cake-like than most (but without the caloric density of an actual slice of cake).

2 – Strawberry Pavlova

Perhaps one of the more intimidating *looking* recipes on this site, Strawberry Pavlova blends healthful eating with farm-fresh seasonal resources: springtime eggs makeup the base for this meringue cookie, and strawberries top a cloud of whipped cream.

Here, I’ve made a traditional pavlova meringue and served the strawberries as thinly sliced as possible with melted dark chocolate.  Another variation would be to adjust the garnish for any season.  I suggest ripe pears in the fall or peaches in the summer as a simple meringue translates anytime of the year.

3 – Strawberry Salad

Spinach beds this simple spring salad with some decadent ingredients: Bourbon Candied Pecans, sliced strawberries, goat cheese, and crisped Pancetta.  With equal parts crunchy and soft, salty and sweet, I can’t think of a better way to introduce fruit into a springtime salad. 

4 – Strawberry Pancakes

Strawberry Pancakes are nothing new to those of us who live in south Louisiana.  But a healthier variation that opts for multi-grain flour certainly is. For a reliable amount of fluffiness, I use buttermilk, but you can always substitute 1 cup of regular milk with 1 tablespoon lemon juice if buttermilk isn’t on hand.  See Joy the Baker’s full description of this substitute and others.

5 – Strawberry & Brie Bruschetta

This strawberry and Brie appetizer takes the bruschetta—toasted bread with olive oil and garlic or tomatoes—to a whole new level.  Instead of the savory bruschetta, we opt for a sweet one that uses macerated strawberries and a decent helping of Brie.  Although the colors may be the same as an Italian antipasti, the flavors are far more dessert-like and candied.  I suggest serving this with a glass of full bodied red wine or in small, bite-size pieces and extra Brie with white wine.

6 – Strawberry Tart

One of my favorite recipes at Clearly Delicious, this Strawberry Tart brings the red, springtime fruit center stage.  Use a structured, amandine crust and a simple homemade custard for a light dessert that’s perfect after a heavy meal and the next morning for breakfast.
