Boiled Peanuts

When hosting a party for a large group of people, it can be difficult to prepare snacks everyone will enjoy. But the next time you rush to purchase large bags of potato chips and party platters, consider a simple (but salty) solution: Boiled Peanuts. Like buttery popcorn at the movie theatre, Boiled Peanuts are the perfect finger food when watching a game. Not only do they go wonderfully with cold beer and soda, but they are also incredibly addictive.

As the name suggests, Boiled Peanuts are traditionally cooked on the stovetop by boiling raw peanuts in salty hot water until they have reached your desired level of softness. However, a slow cooker is a wonderful alternative for containing this process without the fear of burning the peanuts if you forget to stir them during a great play. Slow cookers are also great for making sure your food is cooked evenly and will keep your snacks warm well after halftime.

Below is my favorite football party recipe for Boiled Peanuts prepared in a slow cooker, including a dash of spicy cayenne. 

Boiled Peanuts

Prep Time: 5 minutes

Cook Time: 2 1/2 to 3 hours

Ingredients:

*2 pounds raw green peanuts, thoroughly rinsed

*2/3 cup kosher salt

*9 cups water, plus more as necessary

*1 Tbl. cayenne, optional

SPECIAL EQUIPMENT NEEDED:
*crockpot or similar slow cooker

1) Thoroughly rinse peanuts in cold water using a large strainer. To prevent grime buildup inside your crockpot, you may wish to repeat this step several times.

2) In a large saucepan, add salt and water and bring to a boil over medium-high heat. Boil for five minutes, stirring until salt is fully dissolved. Remove water from heat and rest for five more minutes.

3) Transfer salt water to slow cooker. If using cayenne, add to water and whisk to combine.

4) Stir in raw peanuts, coating to cover in salt water. Set cooker to high and cook for 2 ½ to 3 hours, or until desired level of softness.
