Today’s recipe is an easy, roasted carrots dish, inspired by the Apprentice Cook’s Recipe, “Cooked Carrots,” in The Lord of the Rings Online:

Cooked Carrots

My version of "Cooked Carrots," the Apprentice Cook's recipe in The Lord of the Rings Online, uses fresh carrots, cooked whole, for a rustic look and delicious final dish.

Ingredients

  • 1 lb. carrots, peeled and washed
  • 1 Tbl. olive oil
  • Salt and pepper, to taste
  • 1 Tbl. butter, melted
  • dash of allspice

Instructions

Preheat oven to 350F.

Peel and wash carrots, transferring them to a baking sheet lined with parchment paper when you are done.

Drizzle carrots with olive oil and sprinkle with salt and pepper, to taste. Toss carrots.

Roast in the oven for 45-minutes, turning every fifteen minutes, to ensure even cooking.

Check carrots with a toothpick to ensure they are cooked all the way through at the thickest (top) part. When a toothpick comes out easily and the carrot is tender, they will be done.

Plate carrots and drizzle in one tablespoon of butter. Sprinkle with allspice for a superior version!
